I'm sure they do, and to keep their professional line of work within parameters they behave themselves professionally. For a women, becoming aroused might have more controlled attitude than a man would - no penile erections that could be seen. However if she wearing a shirt or blouse that shows nipple erections they could be seen.
I'm sure they train them well to control or to escape for a while to cool down.
